what you need:- 150ml water 1 med onion, coarslely chopped 3 cloves of garlic, peeled & chopped 2 fresh green chillies, chopped (Nae seeds if yer a poof) 2 tbsps chopped coriander leaves 125g gram flour sieved 1 tsp ground coriander 1 tsp ground cumin half tsp garam masala half tsp chilli powder 1 tsp salt pinch of bicarbonate of soda 350g chicken cut into bite sized chunks or strips Put 90ml of water into a blender wi’ the onion, garlic, chillies and coriander leaves. Blend till smooth In a large bowl, mix the flour, coriander, cumin, garam masala, chilli powder, salt and bicarb. Add the wet ingredients and mix to form a thick paste, adding some water if required. Lob in the chicken and coat well. Leave for 20 minutes. Heat the oil, ( deep fat fryer 180 oC) and in batches lob in the chicken, then reduce the heat to allow the outside to crisp quickly, then the inside to cook. (you can always put in the oven 4 a we bit longer if your no sure its cooked) Ensure you turn the heat to high when they are done to be ready for the next batch. Ye can use the mix for any pakoras. Mushroom, cauliflower etc. enjoy troops and next time i will give you a chilli sauce recipie

its better with indian GRAM flour ...most shops sell it in we bags and its no that dear either. its a cracking recipie from an indian chef i knew a while back
